Ain't yo mamma's mimosa

So, it's brunch this past Sunday.  Time for football, dozing on the couch, and a delicious meal.  What cocktail goes better with brunch than one of the sparkling variety?  Wanting to explore a bubbly version of an old standard, it seemed we had found the perfect recipe with the Sparkling Sidecar.  What did we learn from our little experiment?  There's a reason they add juice to a mimosa or bellini.  'Nough said.

Sparkling Sidecar
1 oz. Cointreau
1/2 oz. cognac
4 oz. cava
Lemon peel garnish

Pour in glass and bottom's up.  Do not drive heavy machinery while under its influence.
