This gin-based herbal liqueur was first introduced to us at our local happy hour hot spot, Jayne's Gastropub. Pimm's Cup is their signature drink, and while Jayne's version is a bit more complicated than what we attempted here, both are quite refreshing on a warm day . . . and it's been unseasonably warm around here lately. All you gin-haters out there, fear not; Pimm's has a light herbal and spice flavor without the "pine tree" essence.
Pimm's Cup
3 oz Pimm's No.1
4 oz club soda
lemon wedge
cucumber spear
In a tall glass pour Pimm's and soda over ice, squeeze lemon wedge and drop it in, stir, garnish with cucumber and lemon, enjoy!
Variations we tried and enjoyed:
A sweeter tarter version . . .
3 oz Pimm's
3 oz 7-up
1 1/2 oz club soda
lemon wedge
cucumber spear
A sweeter spicier version . . . (Erik's preference)
3 oz Pimm's
3 oz ginger ale
lemon wedge
cucumber spear
